The other night when I made
Tri-tip with BBQ Sauce I made these awesome potatoes to go along with them! They were seriously the best potatoes I have had in a really long time!

Ingredients:
-6 Slices of Bacon, Cooked and Chopped
-6 Medium Potatoes (About 2 lbs), unpeeled
-3 TBSP Butter
-3 TBSP All- Purpose Flour
-1/2 Tsp. Salt
-1/4 Tsp. Pepper
-1 Can Evaporated Milk
-1 Cup Water
-2 Cups Shredded Cheddar Cheese
-2 Green Onions, Sliced

Thinly slice the unpeeled potatoes. Place potatoes in saucepan, cover in water and bring to a boil. Cook until potatoes are tender. Drain.

Meanwhile, heat butter in saucepan. Stir in flour, salt, pepper, evaporated milk, water and 1/3 Cup of bacon. Cook and stir mixture for about 10 minutes until it boils.

Remove from heat and stir in cheese and green onions.

Layer half of the potatoes in a baking dish.

Pour half the sauce over potatoes. Top with remaining potatoes and sauce.

Top with
remaining cheese and bacon. Heat in oven until cheese is melted and heated through.
