Vegetable-Beef Soup

I have been sick, so I thought what better dinner than a soup to make me feel better. This soup was very good and super easy since you just throw it in the crock pot and let it cook all day. This will be my last recipe for a few weeks since in only 2 short days we will be adding another addition to our family!!
Ingredients:
-Boneless Beef Pot Roast
-4 C. Water
-1 14 1/2 oz. Diced Tomatoes, Undrained
-2 C. Frozen Mixed Veggies
-3 Medium Potatoes, Chopped
-1 Envelope Onion Soup Mix
-1 Tsp. Instant Beef Bouillon Granules ( I used chicken because I didn't have any beef)
-1 Clove Garlic, Minced
-1/8 Tsp. Black Pepper
Chop up meat into pieces.
Add the water, tomatoes, mixed veggies, potatoes, onion soup mix, beef bouillon, garlic, and black pepper.Cook in a crock pot on high for 4-5 hours or on low for 8-10 hours. Serve and Enjoy!!

Sopa Fideo

This recipe reminds me so much of a dish that my grandma makes. She said that it is called "Make-them-eat-it." She said that you just mix a bunch of items together and "Make them eat it" ha! I am so glad I found this recipe because as soon as I tasted it I said "This taste just like what Nana makes." Yummy!!Ingredients:
-1 lb Hamburger Meat
-12 oz. Fideo Noodles or Thin Spaghetti
-2 TBSP. Oil
-1 Onion, Chopped
-2 Stalks of Celery, Chopped
-1 Bell Pepper, Chopped
-1 Can Whole Tomatoes
-1 Can Whole Kernel Corn
-1/2 Lb. Cheddar Cheese
-1 1/2 C. Hot Water
-1 TBSP. Salt
-1 Tsp. Pepper
-1 1/4 Tsp. Chili PowderBreak raw noodles into small pieces. Brown noodles in oil. Remove and set aside.
Brown beef and drain. Return pasta to skillet and add remaining ingredients except the cheese.
Simmer 20 minuets until pasta is tender.Sprinkle cheese on top and add lid to melt.Serve and enjoy!!

Mexican Casserole

I got this recipe from my grandma when she was here visiting. I know I say all these recipes are so easy but really they are! This is another example of a really easy recipe.
Ingredients:
-1 lb. Ground Beef
-1/2 Onion, chopped
-1 TSP. Garlic Powder
-1/2 Tsp. Pepper
- 1 Can of Fiesta Nacho Cheese
-1 Can of Cream of Mushroom Soup
-1 Can of Rotel
-1 Can of Ranch Style Beans
- Graded Mexican Style Cheese
- Tortilla Chips
Brown meat, onion, pepper, and garlic powder until meat is no longer pink. Drain fat.

Add nacho cheese, cream of mushroom, rotel, and ranch style beans. Bring to a boil.Crush chips into bottom of baking dish. Enought to cover the bottom.Pour soup mixture over chips and cover with cheese.
Place in hot oven until cheese is melted and serve!!

I served it with spanish rice and guacamole!! Yummy!

Smothered Okra

I LOVE okra......I love it any way that it could possibly be made.....pickled, fried, boiled.....you name it I will eat it! When I found this recipe I was so excited to try okra in a whole new way! Last week I made Spicy Chicken and Rice Bake and decided to try this okra recipe with it! It was sooo good!
Ingredients:
-1/2 C. Chopped Onion
-1/2 C. Bell Pepper
-2 Cloves Garlic, Minced
-2 TBSP Butter
-2 C. Whole Okra cut into 1' pieces or 2 C. Frozen cut okra, thawed
-1 Can Diced Tomatoes-drained
-1/8 Tsp. Crushed Red Pepper
-1/2 Tsp. Salt
1/8 Tsp. Pepper

In a large skillet cook and stir the onion, bell pepper, and garlic in butter over medium heat until tender.
Stir in okra, tomatoes, crushed red pepper, salt, and pepper. Bring to a boil. Reduce heat and simmer about 20 minuets or until okra is tender.Hope you enjoy it as much as I did!!!
