Shredded Beef Sandwiches

If you want a super easy, fast, delicious meal, then this is the recipe for you! I have already made these a couple of times when we had a busy day! Just throw it in the crock pot in the morning and when dinner time rolls around you are ready to go!
Ingredients:
-3 Pound Beef or Pork Chuck Pot Roast
-1 Onion, Cut Up
-3 Bay Leaves
-1/2 Tsp. Salt
-1/4 Tsp. Garlic Powder
-1/8 Tsp. Ground Cloves
-1/3 Cup Vinegar
-Any Bread of your Choice ( I used French Rolls)
-BBQ Sauce of your choice if desired

Trim fat from meat. Place meat, onion, bay leaves, salt, garlic powder, and cloves in crock pot. Pour in vinegar.Cover and cook on low for 11-12 hours or on high for 5-6 hours. After meat is done, place it in a serving dish. Pour in BBQ sauce and mix together.Place shredded meat on bread. I poured some of the juice on the rolls and put more BBQ on the meat.


Enjoy with some chips or side dish!

Potato Bacon Casserole

I love finding new recipes for breakfast. Just the same old eggs, bacon and sausage gets old after a while. So I saw this recipe and had to try it. I am going to make it for our next MOPS meeting.
Ingredients:
-4 Cups Frozen Shredded Hash Brown Potatoes
-1/2 Cup Finely Chopped Onion
-About 10 Slices Of Bacon, Cooked and Crumbled
-1 Cup Shredded Cheddar Cheese
-1 Can Evaporated Milk
-1 Egg, Lightly Beaten
- 1 1/2 TSP. Seasoned Salt
Layer half the potatoes, half onions, half bacon, and half cheese in a greased 8 inch baking dish. Repeat for another layer. (I had to use sandwich cheese because we were out of shredded cheese and it turned out tasting just as good!)Combine evaporated milk, egg and seasoned salt in small bowl. Mix well.Pour over potato mixture. Cover.




Bake for 1 hour at 350*. Uncover, and bake for additional 5 minutes.Let stand 10 minutes before serving. Enjoy!

Chicken and Rice Casserole

My Mimmy (greatgma) used to make us Chicken and Rice all the time and it was my favorite!! So, when I saw this recipe I had to try it! If you don't like spicy food, leave the jalapenos out!
Ingredients:
-2 Cups Cooked Rice
-2 Cups Shredded Monterey Jack Cheese
-2 Cups Cooked, Chopped Chicken Breast Meat
-1 Can Evaporated Milk
-1/2 Cup Chopped Onion
-2 Eggs, Lightly Beaten
-2 TBSP Butter, Melted
-1 TBSP Diced Jalapenos
Combine rice, cheese, chicken, evaporated milk, onion, eggs, butter and jalapenos in a greased casserole dish. Stir until well mixed.

Bake at 350* for45 minutes or until toothpick inserted in the middle comes out clean.
Serve and Enjoy!

Creamy Blue Cheese and Bacon Burgers

OK I am finally back in the cooking mode after an extremely busy month. This burger was a major hit! Steven said it was better than a blue cheese burger he had once had at a restaurant.
Ingredients:
-4 Slices of Bacon, Cooked and Crumbled
-1 Cup Finely Chopped Onion
-1/2 Cup Mayonnaise
-4 oz. Crumbled Blue Cheese
-1/8 Tsp. Ground Black Pepper
-Hamburger's Cooked
Cook onions over until tender. Combine mayo, blue cheese, and pepper in small bowl.Add onions and bacon. Top burgers with blue cheese mixture and Enjoy!

Mac & Cheese

The kids wanted some Mac & Cheese the other day for lunch, but of course we didn't have any. I found this recipe and decided to give it a try. We had the left overs with BBQ Brisket. Ingredients: -1 2/3 Cups Dry Elbow Macaroni, Cooked and Drained -2 TBSP Cornstarch -1 Tsp. Salt -1/2 Tsp. Dry Mustard -1/4 Tsp. Pepper -1 Can Evaporated Milk -1 Cup Water -2 TBSP Butter -3-4 Cups Shredded Cheddar Cheese Combine cornstarch, salt, mustard, pepper, evaporated milk, water and butter in saucepan. Cook over medium heat, stirring constantly, until it comes to a boil. Boil for 1 minute. Remove from heat. Stir in 2 cups of cheese until melted.Add macaroni, mix well.Pour mixture into 2 qt greased baking dish. Top with remaining cheese. Bake at 375* for 20-25 minutes until cheese is melted.
Serve and enjoy!! I added a little more cheese when it came out! It was CHEEEESY!

Chipotle Burritos

I made this dish the other day when we had 2 doctor appointments. dance, baseball practice and school. It was a busy busy day so I decided to make something in the crock pot so that when we got home dinner would be ready. It turned out to be so yummy and I can't wait to make them again. Ingredients: -2 Pounds Boneless, Beef Round Steak, Cut Up -1 Can Diced Tomatoes, Undrained -1/3 Cup Chopped Onion -1 Can Chipotle Peppers in Adobo Sauce -1 Tsp. Dried Oregano -1/4 Tsp. Ground Cumin -1 Clove Garlic, Minced -Tortillas -3/4 Cup Shredded Cheddar Cheese Place meat, tomatoes, onion, peppers, oregano, cumin and garlic in crock pot. Cover and cook on high for 4-5 hours or until meat is tender.Pull apart meat and serve in warm tortillas along with cheese. Serve and enjoy. I served mine with beans, rice, guacamole and salsa. Enjoy!

Stovetop Beef and Penne Casserole

I made this dish a couple of weeks ago but I'm not a huge pumpkin fan, so it wasn't that great to me. I wasn't going to post it, but just because I don't like pumpkin does not mean everyone does not like it. So, if you like pumpkin then you will probably like this recipe. Ingredients: -2 Cups Dry Penne Pasta -2 Pounds of Ground Beef -1 Onion, Chopped -2 Cans Evaporated Milk -1 Can (15 oz) 100% Pure Pumpkin -1 Can Tomato Sauce -1 TBSP. Packed Brown Sugar -1 TBSP. Paprika -1 TBSP. Worcestershire Sauce -2 Tsp. Salt -1/2 Tsp. Garlic Powder -1/2 Tsp. Pepper -2 Cups Frozen Peas, Thawed Cook the pasta in large pan for 1-2 minutes less than package directions. Drain. Cook beef and onion in saucepan until meat is no longer pink. Drain. Stir in evaporated milk, pumpkin, tomato sauce, sugar, paprika, Worcestershire sauce, salt, garlic powder and pepper.

Cook, stirring occasionally, until mixture begins to simmer. Add pasta and peas. Serve and enjoy!
