Glazed Chicken With Veggies

Like I mentioned in the Herb-Roasted Chicken post, a local store had whole chickens on sale for a great price so we picked some up and started using them! I found a few good recipes using while chickens and this is one I decided to try. I love how the veggies turned out! They tasted soo good! You would want to start this dinner early, because they chicken takes about 2 hours to cook.
Ingredients:
-Whole Chicken
-3 Potatoes, Cut Up
-6 Carrots, Cut Up, or Baby Carrots (about a pound)
-1/2 Cup Honey
-1/4 Cup Mustard
-2 TBSP Butter
-2TBSP Chopped Onion
-1/2 Tsp. Garlic Salt
-1/4 Tsp. Crushed Red Pepper
-1/4 Tsp. Ground Ginger
-2 Apples, Cut Into Wedges
Rinse inside of chicken, pat dry with paper towels. Tie the chicken up, I tied the legs together and the wings. Place chicken breast side up in roasting pan. Brush with oil. Roast uncovered at 375 for 1 hour.Meanwhile, cook potatoes and carrots in boiling water for about 20 minutes or until nearly tender. Drain.
For glaze, in a sauce pan combine honey, mustard, butter, onion, garlic salt, red pepper, and ginger. Bring to a boil, stirring constantly. Remove from heat and set aside.Discard drippings in roasting pan. Arrange potatoes, carrots and apples around chicken in pan. Spoon glaze over chicken, veggies and apples. Roast uncovered for another hour or until chicken is no longer pink.Serve cooking juices over chicken and veggies.Cut up chicken and enjoy!

Pork Loin With Creamy Mustard Sauce and Caramelized Onions

I made this dinner a few days ago and it turned out great! The caramelized onions went great on top of the meat and sauce. I also made some wonderful cheesy mashed potatoes that I will post soon!
Caramelized Onions Ingredients:
-4TBSP Butter
-1 Onion
Cut onion into slices and place in pan with butter.
Cook for about 10 minutes or until onions are tender.
You can serve these with any meat.

Pork Loin with Creamy Mustard SauceIngredients:
-Pork Loin
-1 Tsp. Vegetable Oil
-1/2 Cup Evaporated Milk
-2 TBSP. Dijon Mustard
-2-3 Green Onions, Sliced Cut pork into pieces. Season with salt and pepper. Heat oil in skillet and cook meat until no longer pink. Cook all the meat and set aside.Keep drippings in pan and add milk, mustard and green onions. Cook for 1-2 minutes.
Serve over pork meat.Enjoy!

Cheesecake Cookie Cups

Oh my gosh this is the BEST dessert I have ever made! I made them for the super bowl party and everyone loved them!! My mouth is watering just thinking about them! I know they are not part of my healthy eating, but they are sooooo gooood!!!
Ingredients:
-1 Package Refrigerated Chocolate Chip Cookie Bar Dough
-2 Packages of Cream Cheese, Room Temp.
-1 Can Sweetened Condensed Milk
-2 Eggs
-2 Tsp. Vanilla Extract
-1 Can Cherry Pie Filling
Line 24 muffin cups.
Place one piece of cooking dough in each muffin cup.
Bake at 325 for10-12 minutes.
Meanwhile beat cream cheese, condensed milk, eggs, and vanilla in bowl until smooth.
Pour about 3 tablespoons of cream cheese mixture over each cookie in cup.Bake for additional 15-18 minutes or until set. Cool on wire rack.Top with cherry pie filling. Chill for 1 hour then serve!! Oh and did I mention they are sooo yummy!!

Pepperoni Pizza Quiche

I wanted to make something that would be easy for breakfast, so I found this recipe and tried it! It turned out so good and I am going to make it again with different toppings.
Ingredients:-
-1 Unbaked Frozen Pie Shell
-1 Package of Italian Blend Cheese
-20-30 Sliced Pepperoni's
-1 Can Evaporated Milk
-3 Eggs, Beaten
-2 TBSP Flour
-1 Tsp. Dried Basil
-1/8 Tsp. Garlic Powder
Sprinkle 1 cup of cheese and half of the pepperoni onto bottom of pie shell.
Whisk evaporated milk, eggs, flour, basil and garlic powder in bowl until blended. Pour mixture into pie shell. Top with remaining cheese and pepperoni's and any other topping you would like. I added olives. Place on baking sheet and cook at 350 for 40-45 minutes. Cool for 5 minutes before serving.
Enjoy!

Cheddar Bacon Scalloped Potatoes

The other night when I made Tri-tip with BBQ Sauce I made these awesome potatoes to go along with them! They were seriously the best potatoes I have had in a really long time!
Ingredients:
-6 Slices of Bacon, Cooked and Chopped
-6 Medium Potatoes (About 2 lbs), unpeeled
-3 TBSP Butter
-3 TBSP All- Purpose Flour
-1/2 Tsp. Salt
-1/4 Tsp. Pepper
-1 Can Evaporated Milk
-1 Cup Water
-2 Cups Shredded Cheddar Cheese
-2 Green Onions, Sliced
Thinly slice the unpeeled potatoes. Place potatoes in saucepan, cover in water and bring to a boil. Cook until potatoes are tender. Drain.Meanwhile, heat butter in saucepan. Stir in flour, salt, pepper, evaporated milk, water and 1/3 Cup of bacon. Cook and stir mixture for about 10 minutes until it boils.
Remove from heat and stir in cheese and green onions.Layer half of the potatoes in a baking dish.
Pour half the sauce over potatoes. Top with remaining potatoes and sauce.
Top with remaining cheese and bacon. Heat in oven until cheese is melted and heated through.
Enjoy!

Sweet Party Mix

I love having some kind of party mix around the house to snack on. This has been my all time favorite party mix so far. I have already made 2 batches of it and they are all gone. I have a few more different party mix recipes I am going to try and if they taste good as well, then I will also post them. I made this mix for MOPS group the other day and they loved it.
Ingredients:
-8 Cups of Chex Cereal. I use the cinnamon to give it a little more flavor, but you can use rice, corn or wheat.
-2 Cups of Pretzels
-1 Cup Sliced Almonds
-3/4 Cup Packed Brown Sugar
-6 TBSP Butter
-3 TBSP Corn Syrup
-1/4 Tsp. Baking Soda
-1 Cup Dried Cherries, Blueberries or Cranberries. I use cranberries.
In a large roasting pan combine cereal, pretzels and almonds. Set aside.
In a saucepan combine brown sugar, butter, and corn syrup. Cook and stir over medium heat until well mixed. Bring to a boil and cook for 5 minutes without stirring. Remove from heat and stir in baking soda.


Pour over cereal, stir to coat.Bake at 350F for 15 minutes, stir cereal mixture and bake an additional 5 minutes. Remove from oven and stir in dried fruit. Pour on wax paper to cool. Enjoy!


Super Burritos

These burritos were very good, even the kids loved them. I didn't use the really big tortillas, but it would have been better if I would have used the big ones. Enjoy!
Ingredients:
-1 Pound Ground Beef
-1 Cup Chopped Onion
-1/2 Cup Chopped Bell Pepper
-1 Clove Garlic, Minced
-1/4 Cup Water
-1 Tablespoon Chili Powder
-1/4 Teaspoon Ground Cumin
-1 Cup Cooked Rice
-1- 4oz. Can Diced Green Chile Peppers, Drained
-Flour Tortillas
-1 1/2 Cups Shredded Cheddar Cheese
-2/3 Cup Chopped Tomato
-2 Cups Shredded Lettuce
For the filling, in a large sauce pan cook beef, onion, bell pepper, and garlic until meat is done and veggies are tender. Drain off fat.
Stir in water, chili powder, and cumin. Cook about 5 minutes or until most of the water is evaporated. Remove from heat. Stir in cooked rice and Chile peppers.
Meanwhile, wrap tortillas in foil. Heat in 350F oven for about 10 minutes to soften.Spoon about 1/2 a cup of filling in each tortilla. Top with cheese, tomatoes and lettuce if using and wrap up.
Arrange burritos on a baking sheet and bake at 350F for 10-12 minutes until heated through.
I served them with quacamole and sour cream.
