Ingredients:
-1 Pound Ground Beef
-1 Cup Chopped Onion
-1/2 Cup Chopped Bell Pepper
-1 Clove Garlic, Minced
-1/4 Cup Water
-1 Tablespoon Chili Powder
-1/4 Teaspoon Ground Cumin
-1 Cup Cooked Rice
-1- 4oz. Can Diced Green Chile Peppers, Drained
-Flour Tortillas
-1 1/2 Cups Shredded Cheddar Cheese
-2/3 Cup Chopped Tomato
-2 Cups Shredded Lettuce
For the filling, in a large sauce pan cook beef, onion, bell pepper, and garlic until meat is done and veggies are tender. Drain off fat.
Stir in water, chili powder, and cumin. Cook about 5 minutes or until most of the water is evaporated. Remove from heat.
Meanwhile, wrap tortillas in foil. Heat in 350F oven for about 10 minutes to soften.
I served them with quacamole and sour cream.
