Crispy Oven Fried Fish

I am not a big fish person but I wanted to try and make some fried fish. I found this recipe and it was super easy so I tried it. Instead of cooking it in the oven (didn't want the house smelling like fish for days) we fried it outside. It turned out great and everyone loved it. It was my in-laws first time to have catfish and could not believe how good it was! I doubled the recipe since there were 6 people eating.
Ingredients-
-1 lb. fresh fish ( I used about 2 lbs. of catfish)
-1/4 C. milk
-1/3 C. all purpose flour
-1/3 C. fine dry bread crumbs
-1/4 C. Parmesan cheese
-1/2 Tsp. dried dill
-1/8 Tsp. black pepper
-2 TBSP butter, meltedRinse fish, pat dry with paper towels. Cut into serving size pieces. Place milk in a shallow dish. Place flour in another shallow dish. In a third shallow dish combine bread crumbs, Parmesan cheese, dill, and pepper. Add melted butter, stir until combined.Dip fish into milk, coat with flour. Dip again in the milk then in the bread crumb mixture. If cooking in the oven, bake at 450 F for 4-5 minutes.

Beef and Brats

When I first read this recipe I was not sure how it was going to taste but it came out really really good. I threw it all in the crock pot and let it cook all day long. It was really tender and so tasteful!

Ingredients:

-1 lb. boneless beef round steak, cut 1 inch thick

-4 ounces uncooked spicy bratwurst or other sausage, cut into 3/4 in. slices

-1 TBSP cooking oil

-1 small onion, sliced and separated into rings

-2 TBSP quick-cooking tapioca (I found it in the pudding section at the store)

-1 Tsp. dried thyme

-1/4 Tsp. salt

-1/4 Tsp. pepper

-1 14oz can chunky tomatoes with garlic and spices, undrained

-2 C. Rice or noodles

Trim fat from beef. In a large skillet brown been and bratwurst on all sides in hot oil. Drain fat.

I browned the bratwurst before I cut it up. It cut way easier that way.

Place the onions, tapioca, thyme, salt, pepper, undrained tomatoes in crock pot. Add beef and bratwurst. Mix together.
Cover and cook on low heat for 10 hours. Serve over noodles or rice!

Two Bean Tamale Pie

This was a very simple and yummy recipe. We had it with homemade Spanish rice and guacamole! I think I could eat Mexican food everyday of my life! I love it! Enjoy!Ingredients-
-1 C. chopped bell pepper
-1/2 C. chopped onion
-2 cloves garlic, minced
-1 TBSP cooking oil
-1 15oz can pinto beans, rinsed, drained, and slightly mashed
-1 15oz can kidney beans, rinsed, drained, and slightly mashed
(I used dried beans and cooked them in the crock pot all day)
-1 6oz can vegetable juice
-1 4oz can diced green Chile peppers, undrained
-1 Tsp. chili powder
-1/2 Tsp. ground cumin
-1 8oz package corn muffin mix
-1/2 C. shredded cheddar cheese
-1/2 Tsp. dried parsley
I added a pound of hamburger meat so it would have some kind of meat in it!


-Grease a 2-quart baking, set aside. In a skillet cook bell pepper, onion, and garlic in hot oil until tender. -Stir in meat (if using), pinto beans, kidney beans, vegetable juice, chile peppers, chili powder, and cumin; heat through. Spoon mixture into baking dish.
- Prepare corn muffin mix according to package. Add cheese and parsley, stirring until combined. Spoon cornbread mixture over the top of bean mixture. Bake at 400 F for 25 minuets or until golden brown.

Breakfast Casserole

This morning I made a breakfast casserole that I used to make for my MOPS group. It is so simple and can feed us for a couple of mornings.
Ingredients:
-6 slices of bread cut up into bite-size pieces
-1 lb. of sausage, cooked and drained
-1 C. shredded cheddar cheese
-6 eggs
-2 C. milk
-1/4 tsp. pepper
Place bread in baking dish sprayed with cooking spray. Top with sausage and cheese.

Beat eggs, milk, and pepper with whisk until blended. Pour over ingredients in dish.
Bake at 350F for 45 min. or until casserole is set in center and top is lightly browned!

Chef Salad

Finally.......it has been what seems like years since I posted a recipe! We were heading out to the beach the other day so I decided to make this chef salad I had a recipe for. I added a few items that were not on the recipe and also doubled the recipe since there were eight of us. It fed all of us and was really really good! What you need:-Lettuce
-Cooked Ham ( I bought the deli ham and diced it up)
-1 Cup Cheddar cheese
-2 Boiled Eggs
-2 Tomatoes
-1 Green or red pepper
-1 Cup of crutons
-Dressing of you choice
Items I added:
-1 Avacado
-Bacon Bits
In a large bowl combine all ingredients and enjoy!
