Stovetop Beef and Penne Casserole

I made this dish a couple of weeks ago but I'm not a huge pumpkin fan, so it wasn't that great to me. I wasn't going to post it, but just because I don't like pumpkin does not mean everyone does not like it. So, if you like pumpkin then you will probably like this recipe. Ingredients: -2 Cups Dry Penne Pasta -2 Pounds of Ground Beef -1 Onion, Chopped -2 Cans Evaporated Milk -1 Can (15 oz) 100% Pure Pumpkin -1 Can Tomato Sauce -1 TBSP. Packed Brown Sugar -1 TBSP. Paprika -1 TBSP. Worcestershire Sauce -2 Tsp. Salt -1/2 Tsp. Garlic Powder -1/2 Tsp. Pepper -2 Cups Frozen Peas, Thawed Cook the pasta in large pan for 1-2 minutes less than package directions. Drain. Cook beef and onion in saucepan until meat is no longer pink. Drain. Stir in evaporated milk, pumpkin, tomato sauce, sugar, paprika, Worcestershire sauce, salt, garlic powder and pepper.

Cook, stirring occasionally, until mixture begins to simmer. Add pasta and peas. Serve and enjoy!

Baked Potato Casserole

I made this as a side dish the other night when I made Spicy Jack Mac & Cheese with Chicken and Broccoli. The potatoes were so creamy and tasted delicious! This would go great with any dish!Ingredients-

-Around 8 Medium Potatoes peeled and cut into 1" chunks

-1 Cup Evaporated Milk

-1/2 Cup Sour Cream

-1 Tsp. Salt

-1/2 Tsp. Black Pepper

-2 Cups Shredded Cheddar Cheese

-6 Slices Cooked Bacon, Crumbled

-Sliced Green OnionsCook potatoes in water for about 20 minutes or until tender. Drain. In a large bowl combine potatoes, evaporated milk, sour cream, salt and pepper. Beat with hand mixer until smooth. Stir in 1 1/2 cups of cheese and half of the bacon. Pour mixture into greased baking dish.
Bake for 20-25 minutes at 350 until heated through. Top with remaining cheese, bacon and green onions.
Bake for additional 3-5 minutes or until cheese is melted. Serve with any dish and enjoy!

Mini Morsel Pancakes

Tonight for dinner we had breakfast. The kids love pancakes so when I saw this recipe, I had to try it. They turned out so yummy and Steven Paul has already asked me if I could make him more for breakfast in the morning.
Ingredients:
-2 1/2 Cups Flour
-1 Cup Chocolate Morsels
-1 TBSP Baking Powder
-1/2 Tsp. Salt
-1 3/4 Cups Milk
-2 Eggs
-1/3 Cup Vegetable Oil
-1/3 Cup Packed Brown Sugar
-Powdered Sugar
- Syrup
Combine flour, morsels, baking powder and salt in large bowl. Mix well.
Combine milk, eggs, vegetable oil and brown sugar in bowl. Mix well.Pour milk mixture into flour mixture. Stir until well mixed. Batter will be lumpy.
Heat skillet and pour 1/4 cup of batter into skillet. Cook until bubbles begin to burst. Flip and cook for another minute.
Top with syrup and powdered sugar. Serve and enjoy! I served with bacon, eggs and leftover Pepperoni Pizza Quiche.

Mexican Meatloaf

I am not a big meatloaf fan, but i found this recipe and decided to give it a try. I really did like it believe it or not. I think the taco seasoning mix made it have more flavor than the normal meatloaf. I made it with the Cheddar Bacon Scalloped Potatoes and okra. It was delicious! Also, this recipe makes 2 meatloaf's, so I just froze the other one for another night. If you only want to make one, cut the recipe in half.
Ingredients:
-3 Pounds Ground Beef
-1 Can Evaporated Milk
-2 Large Eggs
-1/2 Cup Ketchup
-2 Cups Quick Cooking Oats
-2 Packets Taco Seasoning Mix
-1 Tsp. Pepper
-1 TBSP. Dried Parsley
Combine ground beef, evaporated milk, eggs, ketchup, oats, taco seasoning meat, pepper and parsley in large bowl.
Mix well.Divide meat mixture into two ungreased loaf pans. Bake at 350 for 1 hour or until no longer pink.
Serve and enjoy!

Baked Potato Soup

It was a little chilly here today, so I decided to make some warm soup to help everyone warm up. I really like potato soup and this soup tasted just as good as any other potato soup I have had.
Ingredients:
-1/2 Stick of Butter
-1/4 Cup Chopped Onion
-1/4 Cup All-Purpose Flour
-1 Can Chicken Broth
-1 Can Evaporated Milk
-5 Small-Medium Potatoes, Baked or Microwaved (I put ours in the microwave for 15 minutes)
-Cooked and Crumbled Bacon
-Shredded Cheddar Cheese
-Sliced Green Onions
Melt butter in large sauce pan with onions. Cook until onions are tender.Stir in flour, broth and evaporated milk. Scoop pulp from 1 potato, reserve the skin and mash. Add pulp to broth mixture. Cook over medium heat until mixture comes to a boil. Dice remaining potatoes (without skin) and potatoe skin from 1st potatoe and add to the soup. Heat through. Season with salt and pepper.
Top with bacon, green onion, and cheese.I served it with french bread and salad. Enjoy!

Spicy Jack Mac & Cheese with Broccoli and Chicken

This dish was wonderful!! I didn't get many pictures of the cooking process because I showed Steven what I was going to make, and while I was out doing errands he decided to cook dinner. It turned out so good!
Ingredients:
-Chicken, Chopped into Bite Size Pieces
-Cooking Oil
-2 Cups Dry Elbow Macaroni
-2 Cups Chopped Fresh Broccoli
-2 Cups Shredded Cheddar Cheese
-2 Cups Shredded Pepper Jack Cheese
-1 Can Evaporated Milk
-1/2 Cup Grated Parmesan Cheese
-1/2 Tsp. Ground Black Pepper
-2 Tbsp. Bread Crumbs
Cook chicken in hot oil until no longer pink.

Cook macaroni in large pan according to package directions. Add broccoli to boiling pasta water for the last 3 minutes of cooking time. Drain.

Combine chicken, cooked pasta, broccoli, cheddar cheese, pepper jack cheese, evaporated milk, 1/4 cup parmesan cheese and pepper in large bowl. Pour into baking dish. Combine remaining parmesan cheese and bread crumbs. Sprinkle over macaroni mixture. Cover tightly with foil.

Bake covered at 350 for 20 minutes. Remove foil; bake for additional 10 minutes or until heated through.I served it with Baked Potato Casserole (Recipe to come) Enjoy!

Suppertime Sausage Bake

We had breakfast for dinner the other night, so I decided to try something new. I have made a dish similar to this one before, but it didn't have the bell pepper, green onions, or evaporated milk. This is a great dish to make and then heat up for breakfast.
Ingredients:
-1 lb. Sausage, Cooked and Drained
-2 Cans Evaporated Milk
-8 Eggs, Beaten
-2 Cups Shredded Cheddar Cheese
-1/2 Cup Chopped Red Bell Pepper
-2 Green Onions Chopped
-1/2 Tsp. Onion Powder
-1/4 Tsp. Garlic Powder
-8 Cups Cubed Bread
Combine milk, eggs, sausage,cheese, red bell pepper, green onion, onion powder, and garlic powder in large bowl.Add bread cubes, stirring gently to moisten bread. Pour mixture into 13x9 baking dish. Bake at 350 for 45 minutes or until set.

Serve and enjoy! I served with bacon, pancakes, and fresh fruit! Enjoy!

Taco Soup

My mother-in-law gave me this recipe that she had received from one of her coworkers. I couldn't wait to try it because I have always heard how good Taco Soup was. It was super fast and easy and tasted really good!
Ingredients:
-1 lb. Hamburger meat
-1 Small Onion, Chopped
-1 Package Ranch Dressing Mix
-1 Package Taco Seasoning Mix
-1 Cup Water
-1 Can Black Beans, Drained and Rinsed
-1 Can Diced Tomatoes
-1 Can Tomato Sauce
-1 Can Pinto Beans, Undrained
-1 Can Corn
Cook hamburger meat and onions until no longer pink. Drain.
Add remaining ingredients and mix together.
Simmer about 20 minutes until heated through.Top with cheese and serve with tortilla chips! Enjoy!

Creamy Cheesy Mashed Potatoes

The other night when I made Pork Lion, I made these creamy mashed potatoes to go with it! It was the perfect side and tasted sooo good! Rheanne couldn't get enough, she had about 4 helpings!
Ingredients:
-About 6 Potatoes, Peeled and Cut Up
-3/4 Cups Evaporated Milk
-1/2 Stick of Butter
-1 Cup Shredded Cheddar Cheese
-3 Pieces of Cooked Bacon, Crumbled
-Green Onions, Chopped

Place potatoes in saucepan, cover with water. Cook for 20-25 minutes until tender. Drain. Put potatoes in bowl, add evaporated milk and butter. Beat with mixer until smooth.Stir in cheese, green onions and bacon. Season with salt and pepper.
Mix all together and serve! Enjoy!
