I am not a big meatloaf fan, but i found this recipe and decided to give it a try. I really did like it believe it or not. I think the taco seasoning mix made it have more flavor than the normal meatloaf. I made it with the
Cheddar Bacon Scalloped Potatoes and okra. It was delicious! Also, this recipe makes 2
meatloaf's, so I just froze the other one for another night. If you only want to make one, cut the recipe in half.

Ingredients:
-3 Pounds Ground Beef
-1 Can Evaporated Milk
-2 Large Eggs
-1/2 Cup Ketchup
-2 Cups Quick Cooking Oats
-2 Packets Taco Seasoning Mix
-1 Tsp. Pepper
-1 TBSP. Dried Parsley

Combine ground beef, evaporated milk, eggs, ketchup, oats, taco seasoning meat, pepper and parsley in large bowl.

Mix well.

Divide meat mixture into two
ungreased loaf pans. Bake at 350 for 1 hour or until no longer pink.

Serve and enjoy!
