Slow Cooker Italian Chicken!

Sorry I have not posted in forever! This was an easy meal that you can just throw in the crock pot and go on with your day!

INGREDIENTS:Chicken

Slow Cooker Italian Chicken Seasoning

2-Cans of Stewed Tomatoes

1-Can of Tomato Paste

1-Carton of Fresh Mushrooms

Throw all of that into the crock pot and cook on low for 8 hours and it is ready to eat!I added a few cups of water so it was more like a soup.I served it with noodles!

Fried Chicken with Cream Gravy

This is a very fast and yummy to my tummy recipe! I still need to work on the gravy and hopefully it will come out better!
INGREDIENTS:1/3 C.Flour 1 1/2 TSP Poultry Seasoning 1 1/2 marjoram 1 1/2 Onion Powder 1/2 TSP Salt Cooking Oil
In a plastic bag combine flour, poultry seasoning, Marjoram, onion powder, salt, and black pepper. Add Chicken pieces, shaking to coat.

Add chicken to heated oil. Cook uncovered for about 15-20 minutes or until chicken is no longer pink!Cream Gravy Recipe:

Reserve 2 TBSP of drippings from chicken skillet. Add 2 TBSP flour, 1/8 TSP black pepper. Stir until smooth. Add 1 2/3 C. Milk.Cook and stir over medium heat until thickened and bubbly.

Lasagna

Ingredients:1 Lb hamburger meat, 1TSP Salt, Jar of Spaghetti Sauce, Cottage Cheese, 1 Bag Mozzarella Cheese, Uncooked Lasagna Noodles,Parmesan Cheese
Cook meat and drain. Add salt and spaghetti sauce. Bring to a boil. In a 9x13 baking dish layer sauce, noodles, cottage cheese, and mozzarella cheese ending with sauce. Top with remaining mozzarella cheese and sprinkle with Parmesan. Cover and bake at 350 for 1 hour!

Chili-Pasta Skillet

I doubled the recipe since we had people over for dinner! I forgot to add the cheese, but it was still yummy to my tummy!
Ingredients:1 Lb Ground Beef 3/4 C. Chopped Onion 1-15oz Can Red Kidney Beans, rinsed and drained 1-14oz Can Diced Tomatoes, undrained 1-8oz Can Tomato Sauce 1/2 Elbow Macaroni 1-4oz Can Diced Green Chile Peppers, Drained 2 TSP Chili Powder 1/2 TSP Garlic Salt 1/2 C. Shredded Cheddar Cheese
In a skillet cook meat and onion until meat is brown and onion is tender. Drain off fat. Stir in beans, tomatoes, tomato sauce, macaroni, chile peppers, chili powder, and garlic salt. Bring to a boil, reduce heat. Simmer, covered for 20 minutes or until macaroni is tender, stirring often. Remove skillet from heat. Sprinkle with cheese. Cover and let stand until cheese is melted.

Taco Salad......Toastada

I was going to make Taco Salads for dinner but I could not get my tortillas to shape like bowls so I just made toastadas instead.They were Yummy to my Tummy!
Ingredients:Flour tortillas 1 lb Ground Beef 3 Cloves Garlic 1-15oz Can Dark Red Kidney Beans, rinsed and drained 1- 8oz Jar Taco Sauce 3/4 C. Frozen Whole Kernel Corn, thawed 6 C. Shredded Lettuce 2 Med. Tomatoes Chopped 1 Lrg. Sweet Pepper Chopped 1/2 C. Thinly Sliced Green Onions 1 Med Avacado Pitted, Peeled, and Chopped 3/4 C. Shredded Cheddar Cheese Sour Cream

Lightly brush 1 side of flour tortillas with a small amount of water or coat with nonstick cooking spray. Coat small oven safe bowls with nonstick cooking spray. Press tortillas, coated sides up, into prepared bowls. Place ball of foil in each tortilla cup. Bake at 350 for 15 to 20 minutes or until light brown. Remove the foil and let tortillas cool. Remove cups from bowls. Set Aside.

In a saucepan, cook ground beef and garlic. Drain off fat. Stir in kidney beans, taco sauce, and corn. Bring to a boil, reduce heat. Simmer, covered, for 10 minutes. Meanwhile, in a large bowl combine lettuce, tomatoes, sweet pepper, and green onions.To serve, divide lettuce mixture among the tortilla cups. Top each with some meat and avocado. Sprinkle with cheese. Serve with sour cream.

Chicken Cacciatore

Ingredients:Chicken 2TBSP Olive Oil 1 1/2 C Sliced Fresh Mushrooms 1 Medium Onion- Sliced 1 Clove Garlic 1 Can Diced Tomatoes, Undrained 1 6oz Can Tomato Paste 3/4 C. Dry White Wine 1 TSP Sugar 1/2 Tsp Salt 1/2 Tsp Dried Rosemary 1/2 Tsp Dried Thyme 1/4 Dried Oregano 1/8 Tsp Black Pepper Hot Cooked Noodles

Cook Chicken in hot oil about 15 minutes or until light brown. Remove chicken from skillet, reserving drippings in skillet. Add mushrooms, onions, and garlic to skillet. Cook and stir about 5 minutes or until tender. Return chicken to skillet. Meanwhile, in a medium bowl combine tomatoes, tomato paste, wine, sugar, salt, rosemary, thyme, oregano, and pepper. Pour over chicken in skillet. Bring to a boil, reduce heat. Simmer, covered, for about 30 minutes or until chicken is done, turning once while cooking. Serve over noodles!

Maryland Fried Chicken

This recipe is kinda like the oven fried chicken but you cook it on the stove instead of the oven! It did not take as long to cook and it is another recipe that was easy and Yummy to my Tummy!
Ingredients:
Chicken 1 Egg 3 TBSP Milk 30 Crushed Saltine Crackers 1 TSP Thyme 1/2 TSP Paprika 1/8 TSP Black Pepper 1 C. Milk 2-3 TBSP Cooking Oil
Mix the egg and 3 TBSP milk in a bowl. In a shallow dish, mix crushed crackers, thyme, paprika, and black pepper. Dip chicken in egg mixture, then in crackers.
Cook chicken in oil for about 10 minutes. Flipping occasionally to brown. Pour in 1 C. Milk. Cover and let cook until chicken in no longer pink!

Spicy Chicken and Rice Bake

I made this for dinner last night and it was a hit! This is something that I will defiantly make again because it was Yummy to my Tummy!
Ingredients:
Chicken 1/2 C. Chopped Onion 1/2 C. Green Sweet Pepper 2 Cloves Garlic, minced 1 Tbsp. Cooking Oil 1-15oz Can Black beans, drained 1-14 1/2 oz Can diced tomatoes, undrained 1 C. Tomato Juice 1 can whole kernel corn 2/3 C. Uncooked long grain rice 1-tsp. chili powder 1/8 tsp ground red pepper Paprika
In a large saucepan cook onion, sweet pepper, and garlic in hot oil until tender. Stir in black beans, tomatoes, tomato juice, corn, uncooked rice, chili powder, red pepper and 1/2 tsp salt. Bring to a boil. Transfer rice mixture into a baking dish. Arrange chicken pieces on top of rice mixture. Sprinkle chicken with paprika.
Bake,covered, at 375F for 45 minutes of until chicken is no longer pink!

Oven-Barbecued Chicken

Ingredients:
Chicken 1/2C. Chopped Onion 1 Clove Garlic 1TBSP cooking Oil 3/4 C. Bottled Chili Sauce 2TBSP Honey 2TBSP Soy Sauce 1TBSP prepared Mustard 1/2 TSP Prepared Horseradish 1/4 TSP Crushed Red PepperArrange Chicken in a baking pan, and bake at 375F for 25 minutes. While cooking the chicken, in a saucepan cook onion and garlic in hot oil until tender. Stir in chili sauce, honey, soy sauce, mustard, horseradish, and red pepper. Take chicken out and brush sauce over chicken and continue cooking until chicken is no longer pink.

Oven Fried Chicken

This is once again a quick and yummy to my tummy recipe.
Ingredients:
Chicken 1Beaten Egg, 3TBSP Milk, 1 1/4 C. Finely Crushed Crackers, 1 TSP Dried Thyme 1/2 TSP Paprika 1/8 TSP Black Pepper 2TBSP Butter, meltedCombine egg and milk in a small bowl. In a shallow dish, combine crackers, thyme, paprika, and pepper. Dip chicken into egg mixture, coat with cracker mixture. Place chicken in a greased pan, and drizzle chicken with melted butter. Bake, uncovered,at 375 F until chicken is no longer pink.

Beef Brisket with BBQ Sauce

I had never heard of a brisket being cooked in the crock pot, but I am so glad that I found this recipe! It was easy since you can put it on, go to work, come home and dinner is already made! Super easy and yummy to my tummy! Ingredients:
Brisket 3/4 C. Water 1/4 C. Worcestershire Sauce 1TBSP Vinegar 1Beef Bouillon Cube 1/2 TSP Dry Mustard 1/2 TSP Chili Powder 1/4 TSP Ground Red Pepper 2 Cloves Garlic minced, 1/2 C. Ketchup 2TBSP Brown Sugar 2TBSP Butter
In a bowl combine water, Worcestershire sauce, vinegar, bouillon cube, dry mustard,chili powder, red pepper, and garlic. Reserve 1/2 C liquid for sauce, set aside in the fridge. Trim fat from meat.Place brisket in crock pot.Pour liquid over brisket and add water. Cook on low for 10-12 hours or high 5 to 6 hours.
For sauce, in a small saucepan combine the 1/2 cup reserved liquid, ketchup, brown sugar, and butter. Heat and pass with meat!
For a 5 to 6 quart crock pot, double the cooking liquid ingredients.

Coq au Vin Chicken Cooked in Wine

This recipe is called Coq au Vin,which means Chicken cooked in wine. It was so good and I told Steven when we have friends over for dinner this is what I am going to make!It didn't take very long and it is Yummy to my Tummy!Ingredients:
Chicken 12 to 18 Pearl Onions, peeled 1 1/4 C. Cooking Wine 1/4 C. Water 2 TBSP. Cooking Oil 1 C. Fresh Mushrooms 1 C. Sliced Carrots 1 TBSP. Parsley (fresh or dried) 2 Cloves Garlic, minced 1/2 TSP dried Marjoram 1/2 TSP dried Thyme 1 Bay Leaf Cooked Noodles
Cook chicken in oil until brown. Drain fat. Season chicken with salt and pepper. Add onions, wine, water, mushrooms, carrots, parsley, garlic, marjoram, thyme, and the bay leaf. Bring to a boil, reduce heat. Simmer, covered for 30 to 45 minutes until chicken is done! Serve with noodles and enjoy!

Pepper-Lime Chicken Seasoning

This is just a seasoning that I use! It is so yummy! I mix all the ingredients and put it on chicken then grill it!
Ingredients:
1/4 C. Lime Juice 1 TBSP Cooking Oil 2 Cloves Garlic, 1TSP Dried Thyme 1/2 TSP Black Pepper 1/4 TSP Salt

Old-Fashioned Beef Stew

Update 10/18/12- I put all the ingredients (minus the flower and oil) into the crock pot and it turned out great!!!  

Last night I made Beef Stew! This is the perfect weather for some warm stew! Everyone chowed down!

Pork Chops or Steaks!

I found this seasoning recipe for steaks and I decided to try it . I have also used it on porkchops! It was really easy and they turned out great!! Just mix the ingredients and pour over the steaks or pork chops!1 Tsp. Cumin
1 Tsp. Oregano
Salt to taste
1/2 Tsp. Chili Powder
1 Garlic Clove
I added Worcestershire Sauce so they wouldn't be dry!

Cupcakes

I made these cupcakes for Steven Pauls birthday! They are so yummy! I just used cake mix and the icing is buttercream icing!Icing-

1/2 C. Vegetable Shortening


1/2 C. Butter


1 Tsp. Vanilla Extract


4 C. Confectioners Sugar


2 Tbsps water

Cream butter and shortening with mixer. Add vanilla. Gradually add sugar one cup at a time, beating well on med. speed. When it is all mixed up, add water and mix well!


It is that easy and Yummy to my Tummy!!

Lemon-Mustard Chicken...

Tonight I made Lemon Pepper Chicken and it turned out great!It is so easy!Here are the ingredients. I just use chicken breast instead of the different pieces. And it is a little fuzzy but it says 1/8 tsp. of red pepper.
Just mix all the ingredients together and rub over the chicken. I bake it at 400 for about 1 hour. This chicken was really Yummy to my Tummy!
