Pepper-Lime Chicken Seasoning
This is just a seasoning that I use! It is so yummy! I mix all the ingredients and put it on chicken then grill it! Ingredients:
1/4 C. Lime Juice 1 TBSP Cooking Oil 2 Cloves Garlic, 1TSP Dried Thyme 1/2 TSP Black Pepper 1/4 TSP Salt

THis is a blog I followed some last year, but she has her recipes archived, so you can always look things up.
I cook in my crock pot alot, and the good thing is that you can put some meat in while it's still frozen and just let it cook all day - so if you forgot to thaw something, you can still cook dinner.
This week, I put a big package of boneless, skinless chicken breasts (5 total) in the crock pot, still frozen. I added a can of cream of chicken soup, and a can of chicken broth, and set it on low for the day. When I got home, I took all the chicken out and put a block of cream cheese in the crock with the soup and broth and set it on high, and cooked a box of whole wheat penne pasta. I shredded two of the chicken breasts and added it to the sauce in the crock (let the cream cheese melt and stir it all together) - served over the pasta. I got this recipe from the blog above.
And I have 3 cooked chicken breasts in the fridge and will probably make chicken spaghetti with it tomorrow night.
also, to save time and clean up, when ground beef goes on sale, I buy a big package and brown all of it and freeze the already cooked beef in baggies - about 1 lb each. If I forget to defrost something for dinner, I can throw one of these in the microwave for a few minutes and then make something with it - I have some easy casserole recipes, skillet meals, and of course hamburger helper is an option.
