Stovetop Beef and Penne Casserole

I made this dish a couple of weeks ago but I'm not a huge pumpkin fan, so it wasn't that great to me. Ingredients: -2 Cups Dry Penne Pasta -2 Pounds of Ground Beef -1 Onion, Chopped -2 Cans Evaporated Milk -1 Can (15 oz) 100% Pure Pumpkin -1 Can Tomato Sauce -1 TBSP. Packed Brown Sugar -1 TBSP. Paprika -1 TBSP. Worcestershire Sauce -2 Tsp. Salt -1/2 Tsp. Garlic Powder -1/2 Tsp. Pepper -2 Cups Frozen Peas, Thawed Cook the pasta in large pan for 1-2 minutes less than package directions. Drain. Cook beef and onion in saucepan until meat is no longer pink. Drain. Stir in evaporated milk, pumpkin, tomato sauce, sugar, paprika, Worcestershire sauce, salt, garlic powder and pepper.

Cook, stirring occasionally, until mixture begins to simmer. Add pasta and peas. Serve and enjoy!

Mexican Meatloaf

I am not a big meatloaf fan, but i found this recipe and decided to give it a try. I really did like it believe it or not. I think the taco seasoning mix made it have more flavor than the normal meatloaf. I made it with the Cheddar Bacon Scalloped Potatoes and okra. It was delicious! Also, this recipe makes 2 meatloaf's, so I just froze the other one for another night. If you only want to make one, cut the recipe in half.

-1/2 Cup Ketchup
-2 Cups Quick Cooking Oats
-2 Packets Taco Seasoning Mix
-1 Tsp. Pepper

Serve and enjoy!

It was a little chilly here today, so I decided to make some warm soup to help everyone warm up. I really like potato soup and this soup tasted just as good as any other potato soup I have had.

Top with bacon, green onion, and cheese.I served it with french bread and salad. Enjoy!
