It was a little chilly here today, so I decided to make some warm soup to help everyone warm up. I really like potato soup and this soup tasted just as good as any other potato soup I have had.

Ingredients:
-1/2 Stick of Butter
-1/4 Cup Chopped Onion
-1/4 Cup All-Purpose Flour
-1 Can Chicken Broth
-1 Can Evaporated Milk
-5 Small-Medium Potatoes, Baked or Microwaved (I put ours in the microwave for 15 minutes)
-Cooked and Crumbled Bacon
-Shredded Cheddar Cheese
-Sliced Green Onions

Melt butter in large sauce pan with onions. Cook until onions are tender.

Stir in flour, broth and evaporated milk. Scoop pulp from 1 potato, reserve the skin and mash. Add pulp to broth mixture. Cook over medium heat until mixture comes to a boil.

Dice remaining potatoes (without skin) and
potatoe skin from 1st
potatoe and add to the soup.

Heat through. Season with salt and pepper.

Top with bacon, green onion, and cheese.

I served it with french bread and salad. Enjoy!
